  How About Coming to Pfaffenheim ?
How about a visit to our winery ? It would give you the chance to have a chat with our sommelier and taste your favourite wines.
You will be offered a tasting whether you come alone, with your family or with a group, and if you wish, a guided tour of our cellars. Approximately ten cellar visits are carried out each week followed by tastings directed by our sommelier.
   
 
 Opening Hours
The Winery is open every day of the year except 25th December and 1st January.

May to October :
Monday to Friday from 9 a .m. to 7 p.m.
Saturday from 9 a .m. to 12 a .m. and 2 p.m. to 6 p.m.
Sunday from 10 a .m. to 12 a .m. and 2 p.m. to 6 p.m.

November to April :
Monday to Saturday from 9 a .m. to 12 .m. and from 2 p.m. to 6 p.m.
Sunday from 10 a .m. to 12 a .m. and from 2 p.m. to 6 p.m.

In more of its wines, the Cave de Pfaffenheim reserves excellent surprises to you : the 4 living rooms of Pfaffenheim. We arranged for you superb spaces, avoided to accomodate your demonstrations:
- Seminars and formations
- Events
- Conferences
- Commercial meetings

Will you be sensitive to the frank and convivial charm of the Living rooms Rabelais and Molière which accomodate each one more than one hundred guests in an atmosphere of Winstub? One tastes there the wine, one passes from good moments around the stamtisch, in merry groups ?

Some lower steps, is the comfortable Salon Baudelaire : An environment authenticates emerges from this arched vault where 50 sitted people will take seat for a tasting with accompanying notes.

But if your environment must be studious, go up to the Hugo Living room which proposes equipment : screen, video projector, scanner... 150 people can work there with their ease!

Lastly, if you wish to bring together hosts of mark, give go to them to the Living room Brillat Savarin : it counts 8 places VIP within a framework with the cordial woodworks, absolute refinement and the luxury of the best taste.

 Grape Reception
The grapes are towed to the press. They are picked over for a first time according to the vineyard where they are grown. At Pfaffenheim we the grapes are always picked by hand. The grapes are placed in a container then pressed immediately in the presses below.

 Cellars
We separate the free-run juice, the press wine and the juice from the last pressing. The new pneumatic presses enable us to graduate the pressings. We separate the different pressings according to thelevels of pressure required.
 Vats
There are three sorts of vats at Pfaffenheim. We have kept glazed reinforced concrete ones that date from the time when the Cave was opened. However, in 1995 we acquired a number of temperature-controlled stainless steel vats for microvinification which are amongst the most modern in Alsace .

Finally, we have two mechanized pumping over tanks which are used for making Pinot noir ( Alsace red wine) but we also treasure the 225 l barrels kept in our basements that we use for ageing our Pinot noir.



 Centrifugation and Filtration Room
Three Westfalia centrifuges rack the must and cleanse it of impurities.
Once the deposit has been removed from the must is sent to the fermentation vats.
All our wines are clarified by filtration in Spring. Then they are vatted and rest on their lees until bottling which usually occurs 8 to 12 months after the harvest.
